Surf and Turf

The boys had a hankering for steak. So Moms making beautiful rib-eyes and to make it a little special some grilled shrimp







I season the steak with granulated garlic, montreal seasoning, salt pepper, chipole chili pepper and tarragon....SSSHHHHHH it's a secret.

To go with the beautiful steaks I made a mushroom and onion topper by slowly cooking the onions in unsalted butter then adding button mushrooms and some criminis, minced garlic and then adding some tawny port and reducing.

To accompany this meat my boys need some potato so I made my loaded baked potato.


In the cast iron pan I cook some bacon lardons til crispy. Remove and add to the potato mixture. Keep the rendered bacon fat in the pan and you can use that to cook the steak. Yumminess!  I incorporate sour cream butter, cheddar jack cheese (or whatever I have in the fridge) chopped defrosted spinach, crispy bacon bits, a pinch of nutmeg, salt, pepper. Mix well and put it back into the hollowed out baked potato skins. Top with cheese and pop em back into the oven til the cheese is goldenly melty.  Is it ok that I make up words....
