Deep fried Chix Tenders, Sweet pot chip fries and onion rings






I have just really started to experiment with fried chicken. And thought instead for fried chicken how about tenders. Heath, my 6 year old loves them and I can do better than fast foods...I hoped....Well I did! Both boys loved them and have had seconds and the older had thirds....Hope you try em and love them too!










1 pkgchicken breast, cut up in the shape you want, we went long and thin
corn meal, i used both white and yellow 1/2 of each
buttermilk
sriracha sauce adjust to your taste
panko seasoned bread crumbs
whole wheat flour (or whatever you have is fine) not like this is a healthy dish!
salt and pepper
pimenton (smoked paprika)
herbs de provence
canola oil
vidalia onion sliced into uniform rings
sweet potatoes cut in have the long way and then cut into uniform 1/2 moons
egg
deep fryer heated to 375



Directions

 For the chicken tenders. Cut the chicken into the size you want (I got whole boneless breast and cut them into long strips it's cheaper than the tenders and you can cut out the fat etc) Place the cut chicken into a zip lock bag with butter milk and some sriracha (hot sauce of you choice) and let it hang out in the fridge over night

 The next day when you are ready to cook them, add the canola oil to the deep dryer or pan on the stove. Heat the oil to 375. While the oil is heating up, get a large plate and add the panko, cornmeal, breadcrumbs, flour, pimenton and herbs to the plate with salt and pepper and mix around.

 When the oil is hot enough place it in the oil and cook until it's golden brown.

 I put an wire rack on a cookie sheet to drain the food on a paper towel. Put the oven on warm and keep the chicken warm. (remove the paper towels first

 The onion rings Place buttermilk about 1 1/2 cups in a pan with sriracha, and egg and mix. add the onions.

 in a zip lock plastic bag add flour, corn meal pimenton and salt and pepper. When the oil is hot add a few onions to the bag and shake.

 Drain on the wire rack over a paper towel. Season with salt and pepper

 For the sweet potato chip fries. Place the cut potatoes in water. drain and pat dry. Add the sweet potatoes in batches until golden brown.

 Remove and place on wire rack season with salt and pepper

 The dip
mayo, old bay, lemon, sriracha, salt, pepper, dijon, mix and taste, adjust yummy
