| 1 pkg | sweet sausage meat, or sausage casing removed |
| 1 | large onion, diced |
| 2 Tbsp | unsalted butter |
| 2 c | frozen sweet peas, thawed (or fresh if you have em) |
| 1/4 c | light cream |
| 2 c | grated pecorino romano cheese |
| salt and pepper to taste | |
| 1 lb | orecchiette (or any short pasta would be fine) |
Put a large pot with water on the stove and bring to a boil, season the water with salt and add the pasta. Cook until al dente
Chop the onion
melt some butter in a saute pan and add the chopped onion. Cook the onion until they are goldenly caramelized. Remove them from the pan and set aside
Add a bit more butter to the pan and cook the sausage until browned and season with salt and pepper
return onions to pan and combine with the sausage meat.
Add the cream to the pan and a bit more butter and combine
add cheese to the pan and combine
add pasta to the pan and combine
put peas in and combine and taste for seasoning, add more cheese if you want to, cause you can never have too much cheese. I also add some pasta water to the mixture to help the sauce get nice and creamy
This is such a great flavorful pasta! yum!
